January 7-January 11 Meal Plan

Around here it’s back to our regularly scheduled program…aka…school. The princess and 3 jesters start back tomorrow. Hopefully with the dinners I have planned for this week, they will be hearty and healthy enough to get them through homework! And me to!

Mini Meatball Minestronewe like meatballs and we like minestrone. So, ta-da! It’s a pleasurable meal for all! I am however substituting cranberry juice for the red wine.

Asiago Tortelliniwho doesn’t love cheese!?

Chipotle Bean Burritoshopefully the princess and 3 jesters won’t notice how “beany” it is!

Chicken and Sausage JambalayaA flavorful, fulfilling meal!

Perfect Potato SoupBecause it’s the perfect meal for a cold, winter night.

May your family time around the dinner table be laughable and everyone clean their plates so they can enjoy a treat afterwards!

    Yum!

    We’re doing left over Chicken & Dumplings, spaghetti, chicken with brown butter sweet potato quinoa (which will also be a left over one night). Oh and I’m making wild rice & chicken soup for my lunches.
